All lessons learned in hindsight.
Hindsight: that time I decided I was going to go all in with the NutriBullet®. I bought a ton of fresh fruits and veggies, just to realize the consistency of a typical green smoothy totally made me gag. It wasn’t pretty!
Money wasted. My hopes of a J-Low booty via NutriBullet® smoothies were completely shattered.
Another Hindsight: getting a J-Low booty purely by drinking NutriBullet® smoothies wasn’t a realistic goal.
Obviously with any new lifestyle a lot of new this and new that comes with it; new words, new terms, new symbols to look for when in the grocery store, new habits altogether and also finding my very own new favorite go-to staples of yums!
This isn’t an easy endeavor. Vegan is a lifestyle – not a diet!
So, in the spirit of setting myself up for success, I promised myself these two guidelines on my new journey:
- I’m going to take it slow.
- I’m not going to beat myself up for not being perfect, especially in the beginning.
PROGRESS – over – PERFECTION!
Ok, so now back to this phenomenal tastebud tantalizing Vegan BLT that’s going to knock your socks off!
Rave reviews have been going around about Whole Foods’ New Tempeh, Tomato, Lettuce & Avocado Sandwich. First I googled tempeh because I didn’t know what the heck that was. Then on my way home from a meeting, I stopped by Whole Foods, bought their 5-star sandwich and dived in.
Trigger Warning: that sandwich was $10 with tax. Yeah… seriously! And, no that does not include fries and a drink, just the sandwich.
My Review: that sandwich was good, but it didn’t rock my world, much less $10 good. (Sorry, Whole Foods, just being honest.)
But, being the frugal southerner that I am I decided to give a go at this Vegan BLT thing myself.
Good thing I did. And, this totally vegan sandwich is so freakin’ good I can’t not share it.
- 2 slices | Sliced Rustic Baby Boule (toasted or lightly grilled) – $1.79 Whole Foods
- 2 slices | Hickory & Sage Benevolent Bacon – $3.99 Whole Foods
- 5-7 leaves | Organic Spinach (can sub Butter Lettuce) – $1.99 Trader Joes
- 3 slices | Tomatoes on the Vine – $1.99 (for 4) Trader Joes
- 1/2 | Avocado sliced – $1.29 (ea.) Trader Joes
- 2- 3 slices | Kosher Dill Pickle (don’t skip this!) – $2.99 Trader Joes
- a little | Himalayan Pink Sea Salt (to taste) – $1.99 Trader Joes
Toast the bread. Slice up the veggies.
- 1 tbsp | Vegan Mayo – $2.29 (15 oz) Trader Joes / $5.99 (16oz) Whole Foods
- 1/2 – 1 full tsp | Minced Garlic – $1.69 Trader Joes
This isn’t really a secret but if you skip the crushed garlic in the mayo (and the pickles) your taste buds will know something is missing! For the yummy secret sauce crush your minced garlic in a small dipping bowl so that it can mix thoroughly with the mayo, then mix with the mayo. Simple.
I put the secret sauce on one side of each slice of bread, then the bacon on one side, then pickles, then tomatoes, then spinach, then avocado, then the other half of the bread right smack dab on top. It doesn’t get any easier than a sandwich.
Feel free to adjust a bit to fit your preferences – you’re the one eating it.
If you grab an extra avocado while you’re shopping, this can make about 4 or 5 servings plus leftovers of a few items for a total price of about $20. That’s 4 x’s cheaper than buying this sandwich already made from Whole Foods – and this version tastes SOOO much better!
But, you got to try it at least once with the special mayo sauce + pickles. It really makes the sandwich. Seriously!!
This is a both hands kind of sandwich so don’t be afraid to get a little messy. It’s worth it!
